Farm fresh, pasture raised, ribeye steaks + oyster mushrooms w/garlic lemon butter & sweet potatoes crisps
A quality steak , besides delicious , is packed with nutrients. And also a nice opportunity for @q_the_coach & I to cook together. ❤️
My definition for quality steak = farm fresh + pasture raised + grass finished
Recipe:
Ingredients: bone-in ribeyes, oyster mushrooms, garlic, sweet potatoes, micro greens (found all of these at the local @peachtreecitymarket), lemon, micro greens, butter, salt & pepper. Ice cream/rock salt will be a + if you can find it.
Steaks :
@q_the_coach likes to prepare them this particular way. The meat ends up super tender and, with quality meat, barely needs anything else to taste amazing. Not sure where he learned this technique, but I know Brazilians use it too & they know how to cook a good steak!
Pre-salt the meat – bring steaks to room temperature, cover with rock salt, rub & pat in. Let sit for 10-15 minutes & then shake/rub off salt rock.
Heat up a well seasoned iron skillet. Sear the steaks on both sides approx. 1-4 min. per side, depending on the thickness of your steaks, we seared ours for 2.5 min per side. Then throw them in oven at 425 for approx. 3-7 minutes, depending on thickness of the meat & your preferred level on the scale from rare to done. Desired temp for medium-rare is 130-135. Take out when meat reaches your desired temp and let steak rest for approx. 5 min. Do not let steak rest in iron skillet!
Top with some delicious, quality butter before serving.
Mushrooms:
These oyster mushrooms were beautiful . Recipe is from the mushroom vendor. Sauté the mushrooms in butter and garlic over medium to medium-high heat. Season them & right at the end squeeze a splash of lemon over them.
Potatoes:
Thinly slice sweet potatoes or yams . Toss them lightly with olive oil, season them & spread them out on baking sheet. Roast them at 425 for approx. 22 minutes.
Top the steaks with the mushrooms & micro greens & serve along with the sweet potato crisps.
