You knew this post was coming, right?! Leftover pulled pork & peach salsa become breakfast
Recipe:
Add peppers and a little more cilantro , shallots & salt to the left over peach cucumber salsa.
Chop the red onion , cabbage & yellow squash. Heat up pan on medium heat. Add avocado oil. Sauté first the onion, then add the squash & cabbage. Season the veggies. Add the pulled pork and allow it to warm up. Then add the farm fresh eggs . Season eggs too. Add the shredded cheese and allow it to melt a bit then add the micro greens and cilantro.
Serve the eggs topped with the salsa.
Bake the waffles in toaster oven. I used Sprouts frozen homestyle organic waffles because they had very few ingredients and they were one of the healthiest versions I could find (besides making them fresh at home, which is preferred). Topped the waffles with bananas , blueberries & hemp hearts & drizzled some local honey .
