With fall, I start using the crockpot more. And with long busy days.
White bean chicken chili
Recipe:
Ingredients: 1-1.5 lbs chicken thighs or breast (I used thighs), 2 cans Great Northern or cannellini beans drained and rinsed, 2-3 4oz cans hatch green chiles, medium onion , 4 cloves of garlic , 4 cups chicken stock or bone broth, 1 teaspoon cumin, 1 teaspoon oregano, Mexican spices to taste, fresh squeezed limes.
For toppings: jalapeños, green onion, cilantro , sour cream or Greek yogurt, shredded cheese, lime & avocado . My avocado unfortunately was bad when I cut it open so I could not use it. ♀️
Place chicken, beans, green chiles, stock, onion, garlic, spices in crockpot and cook on slow 6-7 hours or on high approx. 5 hrs.
If you want a creamier chili, take out 2 cups once cooked and blend in a blender, then pour back into pot. Shred the chicken & mix all. Top with toppings and enjoy.
