When you haven’t gone groceries shopping yet and you raid your pantry to throw a meal together : Zucchette butternut squash pasta + ground beef + sun-dried tomatoes pesto, mushrooms & roasted peppers sauce
Turned out surprisingly tasty
I will share the recipe below but keep in mind that substitutions are totally fine. This is a bastardized version of a proper Italian dish so no need to follow rigidly. Use what you have and don’t be shy.
Recipe:
Ingredients: grass fed organic ground beef , Trader Joe’s Fall Zucchette pasta , Delallo Simply Pesto sun-dried tomato basil & cheese version, roasted red peppers , mushrooms , cherry tomatoes , onion , garlic , fresh Italian parsley , olive oil, dried Italian herbs , salt & pepper, and some grated cheese (I used a garlic white cheddar – sacrilege! – because that is what I had ).
Chop up the veggies. Start boiling the water and cooking the pasta so it is done right around the same time as the meat sauce.
Heat up 1 pan over medium heat, add olive oil. Add the onion and sauté. Add the garlic. Then add the ground beef. Brown the meat. Season with garlic salt & Italian herbs. The add a couple of tbsp of sun-dried tomatoes sauce. Mix and set aside.
In a separate pan, over medium heat, sauté the balance of the onions & garlic in police oil. Add the mushrooms. Then, once mushrooms have started sweating, add the roasted red peppers. Then add the tomatoes. Season well. Add some Italian parsley.
Add the veggies to the meat & pesto mixture. Toss well and add more parsley. At this point the pasta should be ready.
Plate the pasta, add the meat sauce & sprinkle with cheese.
Enjoy with or without a glass of red wine
