What to do with the “moussaka” leftovers? (see previous post for that dish )
You can turn it into brunch:
Recipe:
Heat iron skillet on medium . Add olive oil & red onion and sauté. Add the cut up bacon . Once bacon has crisped some, add the left over “moussaka”. Stir well, allow to warm, and then add the whisked farm fresh eggs (I get mine from @sowinlovefarm ). Lower heat. Season eggs with herbs (oregano & thyme) & salt + pepper (I used Everyday seasoning from Trader Joe’s). Once eggs start firming, add the tomatoes and smoked mozzarella cheese . Once cooked, take off heat and add the micro greens .
Serve with (or without ) some crusty fresh sourdough .
