What is breakfast? Breakfast is whatever food you choose to break your fast with (usually in the morning since we don’t eat in our sleep).

In some cultures that can mean soup , or cold cuts , or just bread & a cup of coffee ☕️. Here, in the US, it usually equals .

I would like to challenge that tradition and encourage you all to choose more nutritionally dense foods & more variety in all your meals, breakfast included. You may surprise yourself with how your taste buds evolve and how much better you feel.

Here is an example: fried farm fresh eggs from @sowinlovefarm + roasted baby cauliflower & sweet potatoes + Greek salad & nectarine

Recipe:

Slice sweet potato in thin wedges. Toss baby cauliflower, sweet potatoes and shallots in olive oil and season with Everything but the Bagel seasoning. Roast in oven at 425 for 22-25 minutes.

For the Greek salad, cut cucumbers, tomatoes, peppers, red onion + Kalamata olives + feta cheese. Dressing: olive oil, red wine vinegar, Dijon mustard & seasoning.

Fry the eggs in olive oil & season well.
