Recipe:

Salmon: choose wild caught & as fresh as possible (sometimes frozen is your best option). Bring to room temperature, rinse and pat dry. Rub the bottom of Pyrex dish and fish with olive oil. Lay fish skin side down in pan. Liberally squeeze fresh lemon juice over. Add red onion , garlic , capers, cherry tomatoes & lemon slices. Season all well with garlic salt, cracked black pepper & Herbes de Provence . Bake for 25 minutes at 400.
You don’t want to overcook your salmon so check at 20 minutes. Salmon is done at 145 degrees but you should cook it to 130-135 and then take it out and let it sit for 5 minutes.

Salad: mixed greens , nectarine , shaved red cabbage, roasted pumpkin seeds & shallots. Dressing: avocado oil, white balsamic vinegar m, 1 tsp. honey , salt & pepper.
