Vegetarian Lavash egg wraps – light yet filling & quite tasty
Recipe:
Heat iron skillet on medium heat, add olive oil. Sauté first red onion, then add the purple cabbage and cook for 1 min.
Add the zucchini and sauté for another minute. Season veggies with Za’atar seasoning.
Then add the eggs and lower the heat to medium-low. Season eggs with Za’atar + salt & pepper to taste.
Cook for 1-2 min and add the cheese (I used Havarti), and then the tomatoes & rough chopped Italian parsley.
Once eggs are cooked, spoon them on top of mixed greens in the lavash wrap. At this stage you can add hot sauce if you like a little heat. Roll the lavash up.
Serve with a side of salad or fruit. We had ours with some delicious cherries .
