Dinner tonight: Garlic Thyme Chicken with Butter leaf lettuce & Golden berries salad
Recipe:
Marinate for at least 30 min pasture raised chicken thighs (skinless) with olive oil, raw apple cider vinegar, 1 tsp garlic aioli mustard, minced garlic , fresh thyme & lemon pepper seasoning (contains salt ).
Heat iron skillet, add ghee, and add the marinated chicken thighs & top with more sliced garlic. Cook on medium-high heat face down for 5-7 minutes until chicken starts browning. Flip over and cook for another 15-20 minutes until chicken reaches 165 internal temperature. Take off heat & sprinkle with a little more fresh thyme.
Salad: butter leaf lettuce, a little thinly sliced red onion & golden berries tossed with avocado oil, lemon juice & pink Himalayan salt.
