Roasted Cornish Hens & Vegetables – this dish takes a little longer to cook so it is well suited for the weekend when we have a little more time to spend in the kitchen ‍

Recipe:

Bring Cornish hens to room temperature, rinse & dry well. Rub with olive oil, minced garlic , thyme , lemon pepper seasoning, salt & pepper. Rub inside with salt and stuff with a slice of lemon , a couple of garlic cloves & thyme .

Veggies used here: multi colored carrots , baby cauliflower & baby broccoli + red onion . Toss veggies with the olive oil, minced garlic, thyme, seasoning. Arrange around hens in the pan.

Preheat oven to 450 degrees. When ready to put food in, reduce to 415 degrees. Cook for 50-60 minutes until hens reach 165 internal temp. Take out, cover in foil & let rest covered for 10 minutes before serving. Don’t forget to spoon some of the juices from the pan over the meat when plating.
