Pesto veggie bowl – an easy lunch or dinner full of flavor & nutritious ✅

Recipe:

Ingredients: arugula , tomatoes , zucchini , yellow peppers, roasted red peppers , Kalamata olives , smoked Gruyere cheese , white onion , cauliflower rice , Italian parsley, pesto sauce, olive oil, apple cider vinegar, salt & pepper.

Sauté the cauliflower rice with the white onion and when half way cooked, add 1 TBS of quality fresh pesto sauce (you can also make your own pesto sauce but I cheated since short on time ).

While cauliflower rice is cooking, chop all the other veggies and place in bowl.

Add the cauliflower rice to the bowl and toss with pesto dressing.

Pesto dressing: olive oil, 1 tsp pesto sauce, apple cider vinegar, cracked black pepper & a little salt to taste (since pesto sauce is already salty).

Enjoy fresh!
