Long day at work and a mostly empty fridge calls for another salmon salad
Different ingredients since I was out of many things. Fortunately, what I did have still made for a quick, nutritious, and flavorful dinner.

Recipe:

For the salmon: finely chopped white onion , roasted red peppers , garlic dill pickles , capers + canned salmon (choose wild caught & best quality available) + 2 TBS of @stonewallkitchen Lemon Herb Aioli + approx 1/2 a lemon juice (add gradually & at the end so you can taste) + freshly ground black pepper.

Base salad: tomatoes , 1/2 a zucchini (cucumber would work great too), scallions & Italian parsley + olive oil, raw apple cider vinegar, salt & pepper dressing.

Layer baby spinach on bottom of plate, add the base salad, then add the salmon.
