Lavash eggs & veggies breakfast wrap
Recipe:
Chop up onion & veggies. Sauté in olive oil over medium heat. Add first the onions, then the green beans & peppers. Season well. When the green beans are ready (I like mine still a little crunchy), add the spinach, whisked eggs & tomatoes and scramble all. Season again, take off heat & add the cheese (I used Humboldt Fog goat cheese) + rough chopped parsley. Warm the lavash then add the scrambled eggs and veggies. Top with avocado (I did not get to use avocado because mine was bad when I cut it open ) and wrap up.
