When it was a hot, busy, dusty, dirty day renovating but you still want to eat healthy: Summer shrimp & pattypan squash salad
Recipe:
Ingredients: Argentinian red shrimp , tomatoes , pattypan squash, red onion , capers, garlic , shaved Parmesan , arugula , lemon , olive oil, white balsamic vinegar, Citrusy Garlic seasoning, salt & pepper.
Rinse & pat dry shrimp. Sauté shrimp in olive oil with garlic. Season with the Citrusy Garlic.
Cut tomatoes , thinly slice the pattypan squash & chop the red onion.
In a bowl, put the squash, tomatoes, capers, onion & shaved parm. Once shrimp is cooked & cooled down a bit, add to bowl.
Dressing: olive oil, lemon juice, white balsamic, salt & pepper whisked together.
Add dressing to bowl and mix well. Place on bed of arugula & serve.
