We try to eat vegetarian at least 3-5 meals a week. Portobello mushroom burgers with arugula , radishes, cucumber & blue cheese salad
This is a great vegetarian option for those trying to include more veggies in their diet since mushrooms have a nice meaty texture.
Recipe:
Marinate the mushrooms with olive oil, balsamic vinegar & seasoning for 15-30 minutes.
In the meantime, thinly slice cucumbers , radishes & red onion . Place on a bed of arugula & add blue cheese. Then prepare the dressing – olive oil, raw apple cider vinegar & seasoning.
Once mushrooms have marinated, place on grill (medium-low heat) and cook 3-4 minutes per side.
Toast the bun on the grill, add a little mayo (freshly made or choose an organic, minimally processed brand), garlic aioli mustard, grilled mushroom, roasted red pepper & baby kale (or spinach).
Dress the salad and serve together. Enjoy!
