We eat #vegetarian at least 3-5 meals per week and include a variety of vegetables with every meal.
This particular dish – veggies stir fry with yogurt sauce – would have been awesome with some eggplant but I did not have any. ♀️
Recipe:
Thinly sliced golden yellow potatoes + portobellos mushrooms + asparagus + red onion + garlic + roasted red peppers + scallions + Za’atar seasoning – cooked in coconut oil
Start sautéing the potatoes first, then add the mushrooms, then onions, then garlic, then asparagus & roasted red peppers & the scallions at the end.
Yogurt sauce: 1 cup whole milk Greek yogurt, olive oil, 1/2 a lime (juice only), minced garlic, salt & fresh mint
