Open faced omelette or, like @q_the_coach likes to call them, breakfast pizza + fruit salad

Recipe:

Omelette:
Heat pan over medium flame, add the pancetta & I also added 1 bratwurst sausage link (take casing off) and sauté. Add red onion. Then once the meat & onion has cooked, add the spinach & let it wilt a little. Then add the eggs & lower flame/heat to low/medium-low. Cook the eggs half way & then add the Camembert cheese, tomatoes, Kalamata olives, thyme & seasonings. Make sure the heat is pretty low so you don’t overcook the bottom of the omelette. Rotate over the flame to ensure even cooking.

Serve with fruit salad of blueberries, golden berries & white nectarines.
