If after all the yummy burgers , hot dogs , ribs, & steak you had this 4th of July weekend, you need some veggies
Recipe:
Cut up eggplant, yellow squash, purple sweet potatoes, red peppers, and red onion. You can include any other veggies such as zucchini, other types of potatoes, cauliflower, broccolini etc.
Toss well with olive oil, minced garlic , rosemary, salt & pepper and any other herbs & spices you like.
Roast in oven at 425 degrees for 10 minutes. Then add cherry tomatoes, Kalamata olives & Greek feta (feta in brine, not dry feta). Roast for another 20-23 minutes.
