I promised I would share some suggestions for leftovers so here is the first example:
Salmon frittata with peach & tomatoes salad/chutney + everything but the bagel sweet potatoes crisps.
I had 1 salmon burger and some peach & squash chutney left but not enough for 2 people to have for lunch next day so I repurposed the ingredients for brunch.
Recipe:
Start with making the potatoes first.
Sweet potatoes crisps – cut potatoes into quarters and then thinly slice them. Melt 1 tsp of coconut oil and toss them well. Season them with Everything But the Bagel seasoning and place in convection oven for 20 minutes at 450.
Frittata – chopp up fresh some red onion, asparagus & yellow peppers. Sauté them (onion went in 1st, then the asparagus & peppers), season them, then add the eggs. Cook over medium-low heat for about 1-2 minutes and then crumble the salmon patty and add it to the eggs. Also add some red pepper flakes. When almost ready, sprinkle shaved Parmesan & some fresh cilantro.
Peach & tomatoes salad/chutney – take the left overs and add more peach, yellow cherry tomatoes & red onion. Toss with previous ingredients & add a little extra splash of apple cider vinegar & touch of salt (to taste) + fresh cilantro .
Serve together and enjoy!
