Do you remember the Mediterranean Chicken dish I made last week? Well, I had a bunch of the cooked veggies left over (eggplant , zucchini , carrots & purple cabbage ). A little fresh sautéed onion & yellow tomatoes, added eggs , a sprinkle of cheese & fresh parsley & seasonings and voila – a version of Shakshouka for breakfast/brunch or another dinner
