I love #breakfast ❤️ – #frittata with bacon , broccolini , leeks , peppers & cheese
Recipe:
Cut up the bacon, broccolini, leeks, peppers & cheese. Whisk the eggs.
Heat up the iron skillet on medium heat & add a little olive oil, then the bacon & broccolini.
Sauté for a couple of minutes & add the peppers. Then add the leeks. Then the eggs , then the cheese, herbs (I used an Italian mix here – oregano, basil, thyme) + salt & black pepper to taste. Go lightly with the salt since the bacon & cheese will already add saltiness to the dish.
Cover and cook for a couple more minutes. Since the iron skillet gets pretty hot, make sure to turn down the flame when you add the eggs so the bottom does not overcook. You will want to watch the dish carefully at this stage & once the top of the eggs starts firming & the cheese melting, take off the heat immediately.
