Greek chicken in the crockpot for when you want a healthy meal with minimum effort & lots of flavor
Recipe:
Season skinless chicken breasts or thighs (I used thighs) with salt & pepper. Brown the chicken in a skillet with olive oil for 1-2 minutes on each side. Place chicken in crock pot and add Kalamata olives, red onion chopped into large pieces & roasted red pepper strips around the chicken.
In a bowl whisk together olive oil, red wine vinegar, minced garlic, fresh or dried oregano & thyme, and optional 1 tsp of honey . Be generous with the herbs.
Pour mixture over chicken & cook everything for 3-4 hrs. on low. Can be cooked on high too (1-2 hrs.) but the slow cooking brings out more of the flavors.
When ready to serve, add crumbled feta (brined feta will be creamier & the better choice) and fresh herbs (thyme or basil).
Enjoy by itself, with a salad, over rice (cauliflower rice works too) or pasta.
