Getting home late from work meant either picking up something on the way or making a quick meal. I chose the healthy route and opted to cook: hummus veggies wrap
Easy to make & much more nutritious than any fast food!
Recipe:
Sauté in olive oil over medium heat the onion leeks & thinly sliced red peppers . Add the zucchini & yellow squash, then the red cabbage. Season all well. I used garlic herb & paleo seasoning mixes from Sprouts + cracked black pepper. Once veggies are cooked (cabbage still a little crunchy though), take off heat and add the cheese. Let it melt some while you get the wraps ready.
Warm up the Ezekiel wraps. Spread the hummus (you can make your own or I used @cedarsfoods organic lemon hommus). Add the veggies with cheese and then top with micro greens (I used arugula micro greens here).
