Figs & steak arugula salad
Recipe:
I did not have the nicest cut of meat – top blade steak (would have been awesome with a rib eye) so I made sure to marinate the meat for at least 1 hour. Marinade: olive oil, balsamic vinegar, minced garlic , salt & pepper.
Cooked the steak in the iron skillet on medium-high.
Salad: arugula , fresh figs, red onion & shaved Parmesan
Dressing: olive oil, balsamic vinegar, salt & pepper.
Once steak is ready, add to salad and toss with dressing. Sprinkle a little more Parmesan on top and serve.
