Another summer citrus garlic shrimp salad – light, refreshing & bursting with flavor & nutrients
Recipe:
Peel, rinse & dry well the shrimp. Wash & chop up the turnip greens , red cabbage (thinly sliced), tomatoes , red onion (thinly sliced) & garlic .
In a bowl, stage the cabbage, tomatoes, red onion & capers.
Sauté the turnip greens with the garlic in olive oil. Salt & finish off with lemon juice. Place in the bowl with the rest of the veggies.
Season the shrimp well with Citrusy Garlic seasoning & sauté on medium-high heat in olive oil. Shrimp will cook fast so make sure you flip them over in 1-2 min. When almost done, squeeze fresh lemon juice over and mix well in the pan so the flavors all blend. Place the shrimp with the lemon sauce in the bowl with the veggies.
In a small bowl whisk together olive oil, more lemon juice, white balsamic vinegar & lemon pepper seasoning.
Pour over the veggies & shrimp bowl and toss well.
