After a great workout with @q_the_coach time for some #brunch – breakfast sandwiches

Recipe:

Ingredients: ciabatta bread , applewood smoked bacon , provolone cheese , red onion , roasted red peppers , a little red cabbage for crunch, dill pickles, mayo, garlic aioli mustard, sun-dried tomatoes pesto, farm fresh eggs from @sowinlovefarm + a pear for the side and champagne & mango nectar for the mimosas.

Fry up the bacon . Once you have taken the bacon out, fry the eggs in the bacon fat. Season well (I used Everything But the Bagel seasoning) and then add the cheese (I used provolone but you can use cheddar, gruyere, swiss, havarti, etc.).

You can toast the bun, but the ciabatta bread I had was so fresh it worked well without toasting.

Mix the sun-dried tomatoes pesto with mayo. Spread it on one side of the bread. Spread the mustard on the other. On the mustard side add the bacon, eggs & cheese. The other side the veggies: red onion thinly sliced, red cabbage thinly sliced, pickles & roasted pepper. Combine and serve with the sliced pear.
