When your kind neighbors give you these pretty #pattypansquash from their garden

Recipe:

Wash & dry pattypan squash. Trim top & bottom, cut in half and slice into wedges.

Get pan hot & add coconut oil. Add pattypan squash wedges and let them cook a minimum of 3 minutes per side at medium-high heat until browned without flipping or stirring.

Season with Za’atar spice mix (you can find at Trader Joe’s) & salt. Once they are browned in spots, flip them and brown them on the other side.

Take out of pan and quickly toss in the red onion until softened.
Mix pattypan squash, onion & add a little fresh basil, thyme or oregano .

If you don’t have Za’atar you can use other Mediterranean or Middle Eastern spices instead (oregano, thyme, savory, etc.).

Enjoy by itself or as a side. We had ours with some pesto chicken & yogurt sauce.
