We love cooking together: Sriracha BBQ pork loin by Chef Q @q_the_coach with my sides garlic thyme mushrooms & cucumber salad
Recipe:
Pork loin:
Dry rub meat with salt, garlic powder, smoky paprika, pepper & let sit for 15 minutes. Cook in iron skillet in the oven at 400 degrees for 20 minutes. Add the Sriracha BBQ sauce & cook for another 4 minutes. Take out & let meat rest for 5 minutes.
Sides:
Make the cucumber salad first so it has the chance to sit while you cook the rest. Slice cucumbers, deseed them & cut into cubes. Toss with thinly sliced red onion, avocado oil, red wine vinegar & salt.
Cook mushrooms in iron skillet in avocado oil over medium-high heat. Once mushrooms start sweating, add the garlic, thyme & season with salt & pepper. Continue cooking until mushrooms are done.
Serve all together.
