Vegetarian dinner and my first time cooking turnip greens.
Sautéed turnip greens & zucchini + onion , garlic & thyme with peppers , tomatoes & Parmesan cheese
Recipe:
Wash & chop up all veggies. Heat up olive oil, add the onion, cook them for a couple of minutes until they start getting translucent, then add the garlic, then the turnip greens. Salt the greens and allow them to start softening. Add a tablespoon of raw apple cider vinegar. Stir and cook for another minute before adding the thinly sliced zucchini. Season well & add the fresh thyme. Finish sautéing the turnip greens & zucchini but make sure you don’t allow the zucchini to get soggy.
Take off the heat & toss with the peppers & tomatoes. Add more salt & pepper to taste. Then add shaved Parmesan & mix well.
Serve the veggies by themselves, as a side dish to chicken or seafood, or toss with pasta (penne or orzo would work well).
