Quick, nutritious and refreshing black bean vegetarian salad that requires minimal & preparation.
Tomatoes from our garden, most veggies from the local farm stand down the road.
Recipe:
Cut up broccolini and sauté quickly in olive oil. Season with garlic salt & pepper.
Chop up thinly: red cabbage, zucchini, Italian parsley & red onion. Cut up tomatoes, rinse black beans. Place all in bowl + I added smoked blue cheese but you can use any other cheese with a bold enough flavor or no cheese at all for a vegan version.
Dressing: olive oil, apple cider vinegar & seasoning
Toss all & serve.
