Spaghetti squash with red meat sauce A “pasta” dish without the processed carbs Hearty, delicious and nutritious. ♥️
Recipe:
Squash: wash spaghetti squash, dry and, using a sharp knife , cut the ends and split in half. Clean seeds, lightly oil with olive oil, sprinkle salt and pepper. Preheat oven to 400 degrees. Place squash face down on pan (lined with parchment paper or foil) and bake for 40-50 minutes until cut side starts caramelizing (in my oven this took approx. 45 minutes). Let cool a moment and then, using a fork, scoop/grate the squash interior. Place grated spaghetti squash in plate.
While squash is cooking, prepare the red meat sauce. Ingredients: grassfed beef, onion , 3 garlic cloves , roasted red peppers , diced tomatoes , herbs (oregano, basil, thyme), shaved Parmesan , a little heavy cream, olive oil, salt & pepper.
Sauté first the onion in olive oil. Then add the garlic, roasted peppers, and after the meat. Add the diced tomatoes. Season well with herbs & spices. When almost done, add a splash of heavy cream and fresh basil .
Top the spaghetti squash with meat sauce, sprinkle shaved Parmesan, more basil, and cracked black pepper.
