Because I am obsessed with #roastedvegetables They are so easy to make and so flavorful

Recipe:

Ingredients: eggplant, mushrooms, yellow beets, parsnips, red peppers, shallots, tomatoes, cilantro greens, goat cheese.

Cut all veggies to similar size (except cherry tomatoes). Toss with olive oil, garlic salt, cracked black pepper & Herbes de Provence (or any other herbs you have – oregano, thyme, rosemary, etc.).

Roast at 425 degrees for 35 minutes. Add the tomatoes and roast for another 10. Take out, add cilantro greens & goat cheese and toss. Top with some more herbs & sliced jalapeƱos if you like a little heat.
