After a fun bootcamp workout with @q_the_coach time for some brunch
Recipe:
Ingredients: farm fresh eggs from @sowinlovefarm broccolini , shallots , peppers , a little fresh jalapeños, smoked salmon , tomatoes , scallions , Gouda & Kalamata olives .
Heat pan on medium to medium heat, add olive oil, add chopped up broccolini, peppers & shallots. Sauté and season lightly with salt & pepper. Add the whisked eggs and lower heat to medium-low. Next add the salmon, tomatoes, Gouda, scallions, olives & jalapeños. Cover and cook until cheese starts melting. Watch that you don’t overcook the bottom. May need to lower the heat more depending on your stove.
