I keep certain things in my pantry so, no matter what, I can throw a quick & healthy meal together. Here is another vegetarian bowl You can always add chicken or shrimp to these if you prefer.

Recipe:

Ingredients: orzo pasta, Great Northern beans, red cabbage , marinated artichokes hearts, roasted red peppers , onion , cucumbers , tomatoes , olives , a semi soft cheese (I used a pepper jack), and fresh Italian parsley .

While you cook the orzo pasta, cut up all the other ingredients and place in the bowl. Once pasta is ready, add to the bowl and add some extra herbs. For the dressing I used some of the olive oil that the artichokes were marinated in, a splash of apple cider vinegar, salt & pepper.
