Breakfast bowl: wild black rice , asparagus , peppers , red onion , tomatoes , Humboldt Fog goat cheese & farm fresh eggs from @sowinlovefarm

Recipe:

Cook black rice first since this will take the longest. I actually made it the night before and used it in a couple of different dishes.

Chop the veggies. Heat up pan over medium heat, add olive oil. Add to pan and sauté the veggies in the following order: first the onions, then the peppers, then the asparagus. Season well. Add the rice and stir. Take off heat, add cherry/grape tomatoes, Humboldt Fog or your favorite goat cheese (you can also use feta), and rough chopped Italian parsley. Stir again.

While the veggies and rice are cooking, fry the eggs .

Plate the rice and veggies and top with the eggs.
