A bastardized version of moussaka that you can easily make in a crock pot & that packs a lot of flavor & nutrients

Recipe:

Ingredients: eggplant , carrots , parsnips, onion , garlic , roasted red peppers , diced tomatoes , ground beef or lamb, olive oil + fresh &/or dried herbs & for yogurt sauce: Greek yogurt + lemon + herbs

Cut up veggies. Layer in crock pot: olive oil, half of the eggplant, carrots, parsnips, onions, garlic, and then add the ground beef/lamb. Season well with salt, pepper, oregano, garlic powder, and some cinnamon. Then top with the rest of the veggies. Drizzle more olive oil & season again.

Cook on high for 4 hours or low for 5-6 hours. Toss well so all flavors blend, add fresh chopped parsley and then serve with some yogurt sauce. Yogurt sauce: Greek whole yogurt + lemon juice + salt + fresh herbs (parsley &/or mint – I used parsley here).
