A bastardized version of moussaka that you can easily make in a crock pot & that packs a lot of flavor & nutrients

Recipe:

Ingredients: eggplant , carrots , parsnips, onion , garlic , roasted red peppers , diced tomatoes , ground beef or lamb, olive oil + fresh &/or dried herbs & for yogurt sauce: Greek yogurt + lemon + herbs

Cut up veggies. Layer in crock pot: olive oil, half of the eggplant, carrots, parsnips, onions, garlic, and then add the ground beef/lamb. Season well with salt, pepper, oregano, garlic powder, and some cinnamon. Then top with the rest of the veggies. Drizzle more olive oil & season again.

Cook on high for 4 hours or low for 5-6 hours. Toss well so all flavors blend, add fresh chopped parsley and then serve with some yogurt sauce. Yogurt sauce: Greek whole yogurt + lemon juice + salt + fresh herbs (parsley &/or mint – I used parsley here).

With fall, I start using the crockpot more. And with long busy days.
White bean chicken chili

Recipe:

Ingredients: 1-1.5 lbs chicken thighs or breast (I used thighs), 2 cans Great Northern or cannellini beans drained and rinsed, 2-3 4oz cans hatch green chiles, medium onion , 4 cloves of garlic , 4 cups chicken stock or bone broth, 1 teaspoon cumin, 1 teaspoon oregano, Mexican spices to taste, fresh squeezed limes.
For toppings: jalapeños, green onion, cilantro , sour cream or Greek yogurt, shredded cheese, lime & avocado . My avocado unfortunately was bad when I cut it open so I could not use it. ‍♀

Place chicken, beans, green chiles, stock, onion, garlic, spices in crockpot and cook on slow 6-7 hours or on high approx. 5 hrs.

If you want a creamier chili, take out 2 cups once cooked and blend in a blender, then pour back into pot. Shred the chicken & mix all. Top with toppings and enjoy.

Pork loin with mushrooms & kale . This particular dinner was interrupted by the power going off in our house due to storms ⛈ and, since my oven is now electric, affected how juicy the pork loin turned out. ‍♀ Hopefully when you make it you don’t have the same issue.

Recipe:

Bring meat to room temperature. Rinse and pat dry. Season pork loin well with garlic salt, paprika, cracked black pepper and coat well with stone ground mustard. Let sit while you prepare the veggies.

Cut salted pork into smaller pieces (you can also use thick cut bacon ). Clean and quarter mushrooms , chop red onion and garlic . Clean and chop kale . Rough cut Italian parsley.

Heat up iron skillet. Add avocado oil. Add the pork loin and salted pork pieces. Then add the onions, sauté for 1-2 min. Add the mushrooms and garlic. Season well with Umami seasoning (you can use just garlic salt & pepper if you don’t have it). Stir mushrooms well and once they start sweating put iron skillet in the oven at 400 for approx. 13-18 minutes.

When pork loin reaches 145 degrees, take out. Add the kale and mix in well with the mushrooms. Take pork loin out and place on cutting board to rest. Let veggies sit together for a couple of minutes. Add the Italian parsley and serve together with the pork.

Long day at work and a mostly empty fridge calls for another salmon salad
Different ingredients since I was out of many things. Fortunately, what I did have still made for a quick, nutritious, and flavorful dinner.

Recipe:

For the salmon: finely chopped white onion , roasted red peppers , garlic dill pickles , capers + canned salmon (choose wild caught & best quality available) + 2 TBS of @stonewallkitchen Lemon Herb Aioli + approx 1/2 a lemon juice (add gradually & at the end so you can taste) + freshly ground black pepper.

Base salad: tomatoes , 1/2 a zucchini (cucumber would work great too), scallions & Italian parsley + olive oil, raw apple cider vinegar, salt & pepper dressing.

Layer baby spinach on bottom of plate, add the base salad, then add the salmon.

Enjoy!

When you have a really nice piece of pork shoulder and no time to cook it – slow cook it in the crock pot on low for some delicious, melts in your mouth pulled pork

Recipe:

Place a layer of thick slices of onion (1/3 medium-large red onion) & lemon (1 lemon) on bottom of crock pot. Place pork shoulder on top with fatty side facing up ⬆. Season well with sea salt & pepper.

Cook on low for 4.5-5 hrs. Then pour your favorite BBQ sauce over the pork ( ~ 3/4 bottle of bbq sauce). We used @gourmet_warehouse Cherry Jalapeño BBQ sauce and it made for an amazing pairing.

Cook on low for another 2 hours.

Pull the pork apart with 2 large forks and mix well with the sauce in the pot.

Serve with a red cabbage & cucumbers salad dressed with avocado oil, apple cider vinegar, sea salt.

When it was a hot, busy, dusty, dirty day renovating but you still want to eat healthy: Summer shrimp & pattypan squash salad

Recipe:

Ingredients: Argentinian red shrimp , tomatoes , pattypan squash, red onion , capers, garlic , shaved Parmesan , arugula , lemon , olive oil, white balsamic vinegar, Citrusy Garlic seasoning, salt & pepper.

Rinse & pat dry shrimp. Sauté shrimp in olive oil with garlic. Season with the Citrusy Garlic.

Cut tomatoes , thinly slice the pattypan squash & chop the red onion.

In a bowl, put the squash, tomatoes, capers, onion & shaved parm. Once shrimp is cooked & cooled down a bit, add to bowl.

Dressing: olive oil, lemon juice, white balsamic, salt & pepper whisked together.

Add dressing to bowl and mix well. Place on bed of arugula & serve.
